Baked haddock

Invoke simpler times with this easy recipe.

INGREDIENTS
» 1½ lbs white fish (haddock, cod or tilapia)
» 1 lemon
» 1 clove of garlic
» 4 Tbsp extra virgin olive oil
» ¼ tsp salt
» ¼ tsp pepper
» ¼ tsp fresh dill

TO PREPARE
Place the fish in a bowl with olive oil, salt, pepper and dill. Toss until well coated. Roll out about half an arm’s length of tin foil and pour the fish and excess oil mixture onto the middle of the foil. Slice two rounds of lemon and place on top of the fish. Crush the garlic clove to release its oils and place beside the fish. Bring the long ends of the foil together and roll down until it meets the fish, fold and pinch the sides so you end up with a package of fish. Place the packet on a baking sheet and into a 350 degrees F oven for about 20 minutes. Serve when cooked!
