Double chocolate mint cupcakes

Get into the holiday spirit with these delicious high protein treats.

Cupcakes have to be one of my favourite desserts of all time! If you’re looking for the perfect holiday treat to bring to your next function—I definitely recommend these chocolate chip mint cupcakes! They are super easy to make and packed with holiday-inspired flavour.

Makes 6 | Takes 40 min
Nutritional value (per serving): Calories 230; Protein 18g; Carbohydrates 21g; Fat 9g

(The numbers will alter depending on the protein powder you choose)

Cupcake base
• 1 scoop chocolate protein powder
• 1 tsp baking soda
• 1 cup cooked mashed sweet potatoes
• ¼ cup Crisco vegetable shortening
• ½ cup brown rice flour
• 6 Tbsp chocolate Stevia (or sweetener of your choice)
• 2 scoops vanilla protein powder
• ⅛ tsp xanthan gum
• 1 tsp peppermint extract
• ¼ cup ricotta cheese
• 3 tsp red food colouring
• 6 Lindt Lindor chocolate balls of choice (optional)

Cupcake base:
In a large mixing bowl blend all dry ingredients and set aside.

In a separate bowl use electric mixer to blend all wet ingredients to a liquid like consistency. Add dry ingredients to this mix and blend together.

Line cupcake tins with tin foil cupcake liners. I recommend the tin foil-like liners for best results and to prevent sticking.

Preheat oven to 350° and bake for 25–30 min .Test the cupcakes by inserting a wooden toothpick into the centers. If the toothpick is clean when you remove it, the cupcakes are done. If wet batter or several moist crumbs cling to the toothpick after it is removed, the cupcakes need to bake longer.

Cool the cupcakes in the pan for 5–10 minutes before removing them (when they are very hot they are fragile). Cooling cupcakes for the recommended amount of time allows them to be removed from the pan without breaking or tearing.

While cupcakes are baking, in a separate mixing bowl blend together all topping ingredients with a spatula or a wooden spoon. Place in fridge for 30 min to chill.

Once cupcakes are completely cooled, add frosting and top with a Lindt Lindor ball or decorate with festive sprinkles. Enjoy!
