This provides lean protein, a healthy vegetable, and plenty of flavour.
INGREDIENTS (for 2 rolls)
» 1 chicken breast
» 2 asparagus sticks
» 2 slices of organic turkey bacon (find one with low fat)
» 1 teaspoon of Dijon mustard
» 1 tablespoon of honey salt and pepper to taste (try gourmet kosher salt)
Wash the chicken breast and trim the fat. Cut the chicken into 2 to 4 thin slices, depending on how thick you would like your roll to be.
Put the chicken slices in the container. Add the salt and pepper, mustard and honey. Let it marinate for 25 minutes.
Give the asparagus a quick wash. Snap off the ends and remove scales with a vegetable peeler. Place 1 slice of turkey bacon on each slice of the chicken breast. Place 1 asparagus stick on the top and start rolling it.
Once the roll is ready, use a couple of wooden picks to secure the turkey bacon. Place the picks in such a way the chicken meat maintains its shape around the roll. Grill the rolls for seven minutes at 375 degrees F., or bake them for 25 minutes at 375 degrees.
