» ½ cup natural peanut butter
» 2 Tbsp honey
» ¼ cup coconut oil
» 2 Tbsp unsweetened cocoa powder
» ¼ tsp salt
» 1 tsp vanilla
» 1 cup brown rice cereal or 1 cup quick oats
» 2 Tbsp cup shredded, unsweetened coconut
» 24 candy coated chocolate eggs or nuts (optional)
Line a baking sheet with wax paper and set aside. In a saucepan, combine peanut butter, honey, salt and coconut oil and heat until melted and combined together. Stir in vanilla and cocoa powder and add brown rice cereal or quick oats. Mix well. Once combined, add coconut.
Take 1 Tbsp of mixture and drop onto baking sheet. Press your thumb in the middle to form the shape of a nest. Continue until the rest of the mixture is on the baking sheet. Put the baking sheet in the refrigerator until hardened and then top each one with two candy eggs or nuts. Serve cool or at room temperature. Enjoy!
