Raspberry coconut balls

These are my go to summer treat! The fact that you can whip these up in twenty minutes make them even sweeter. Protein powder, shredded almonds and coconut oil mean these balls are packed with those feel good nutrients. Use this recipe the next time you need a little island-style break and satisfy that sweet craving at the same time!

INGREDIENTS

» 1 cup shredded coconut
» 1/4 cup fresh raspberries
» 2 scoops vanilla whey isolate protein powder*
» 1/2 coconut oil
» 1/4 cup shredded almonds
» 4 dark chocolate squares

* I find using an isolate is much better for retaining moisture.

TO PREPARE
Mash up raspberries in a mixing bowl. Mix in shredded coconut, almonds and protein powder. Melt coconut oil separately in the microwave and add to mixture.

Once blended, scoop into small balls on a tinfoil covered tray. Melt dark chocolate in a bowl in the microwave and pour over each ball. Place in freezer for 10 to 15 minutes and enjoy!
