Summer “scramble”

Vegetarian Tofu Scramble Recipe

There are some amazing health benefits to tofu and done right, with a firm tofu, it can be just like eating eggs! This is also a vegan recipe.

INGREDIENTS
Makes 2 | Takes 25 mins

» 1 package of soft tofu
» 1/4 cup of chopped red onion
» 1/2 cup of medley chopped bell peppers
» 1/4 cup of chopped carrots
» 1/4 cup of chopped snap peas
» 2 piece of light rye toasted bread
» 1 tsp of garlic powder
» A sprinkle of salt and pepper
» 1 tsp of turmeric powder
» A dash of soya sauce

TO PREPARE
Place all veggies into a frying pan with olive oil on medium heat. After about five minutes, or when veggies start to look glossy, turn heat to low.

Take tofu out of package and place it on some paper towel. Break apart the tofu like you would do with feta and spread the tofu on the paper towel. Grab some more paper towel and place it on top of your tofu and lightly pressed down on top. Once most of the water is out of the tofu, place it in the frying pan with the veggies.

Increase the heat back to medium and add your garlic powder, salt and pepper and a little more olive oil. Sautée for about 5 mins and then add in a dash of soya sauce and your turmeric powder and sautée for a few more minutes until colour is even.

Toast your toast and place it on your plate. You may add Earth Balance or any flavoured olive oil you want on your toast. Then place your “scramble” on top of toast and enjoy!
