This perfect summertime dessert is made using organic ingredients, is gluten free and contains no processed sugars. It is so healthy and delicious it can even be eaten for breakfast!

Makes 10 | Takes one hour
Nutritional value (per serving): Calories 266; Protein 6.4g; Carbohydrates 43g; Fat 9g (Nutritional value varies based on choice of fruit)

» ½ cup full fat, BPA free canned organic coconut milk
» 8-10 dates, pits removed and chopped
» 1/3 cup organic raw walnuts
» ¼ cup chia seeds
» 2 Tbsp organic maple syrup
» 1 cup buckwheat flour
» 1 cup gluten free oats
» 2 tsp organic unsweetened shredded coconut
» ½ cup full fat yogurt (vanilla flavour or you can use coconut vegan yogurt)
» Fresh fruits of your choice

Begin by placing the coconut milk, dates, chia seeds, buckwheat flour, walnuts and maple syrup in a food processor or blender. Blend until smooth. You may need to add a touch of the coconut liquid from the can to help combine better.

Pour contents into a large mixing bowl. Add the oats to the mixture and combine well.

Grease a muffin pan with some coconut oil being sure each cell is well oiled. Pour 1.5 tablespoon of mixture into each cell and form a well into the centre of the cup. Press the top lightly with a spoon to ensure it’s even and has a deep center.

Bake in the oven at 350 degrees Fahrenheit for 12 min. Remove from oven and allow it to cool for 30 min.

Scoop 1 tablespoon of yogurt into each cup and top with fruits of your choice (I used strawberries, blueberries and kiwi.) Sprinkle some of the shredded coconut overtop to finish. Enjoy!

*Stores well in the fridge for up to five days without the yogurt inside.
